Yeah its definitely been weird. The first day I could only reach the site over VPN which made me think it was a routing issue but today theres timeouts and slowness no matter where I pop out of on the VPN.
Even Cloudflare keeps seeing it as down. I wonder if you have a url you can test with yourself to bypass Cloudflare (which is unlikely the issue if you just did maintenance). I’d also be checking Cloudflare and my hosting for DDOS or traffic spike issues if you haven’t, or at least have a ticket with the hosting provider to check their monitoring for any other resource spikes or issues.
These intermittent type issues can be brutal. Keep in mind that LLMs such as Grok are really great at parsing through server logs. Id trim out the extra noisey cruft first though if possible to save some tokens and limits.

Almost feels like a single node in a cluster failing, or a bad DNS entry in a round robin DNS setup, etc… like Russian Roulette https requests. Not sure your setup or how you might be able to simplify it for troubleshooting.
I would be disabling IPv6, bypassing cloudflares protection service by setting up a new A record for your own testing that has a set IP. If you are able to and have a system to do so, having a SmokePing monitor the site for now would be useful, can do it in a Docker container quick https://hub.docker.com/r/linuxserver/smokeping
Lastly if you have whiskey, that might help.
